Ingredients

  • Beef eye of round roast 2½ pounds
  • Olive oil 2 tablespoons
  • Salt 2 teaspoons
  • Black pepper 1 teaspoon
  • Garlic powder 1 teaspoon
  • Onion powder 1 teaspoon
  • Beef broth 1 cup
  • Sandwich buns 6 soft buns

For the Sauce

  • Ketchup ½ cup
  • Brown sugar 2 tablespoons
  • Apple cider vinegar 1 tablespoon
  • Worcestershire sauce 1 teaspoon
  • Garlic powder ½ teaspoon
  • Black pepper ¼ teaspoon

Instructions

Prepare the Roast Beef

  • Remove the beef from the fridge thirty minutes early. This helps it cook evenly. Pat it dry with paper towels. Rub olive oil all over the roast. Sprinkle salt, pepper, garlic powder and onion powder evenly.

Preheat the Oven

  • Preheat your oven to 325°F. This lower temperature keeps the meat tender. Place the roast on a rack inside a roasting pan. Insert a meat thermometer into the thickest part.

Roast the Beef Slowly

  • Place the roast in the oven. Cook until internal temperature reaches 135°F for medium rare. This takes about ninety minutes. Remove from oven. Tent loosely with foil. Let it rest for twenty minutes.

Slice the Roast Thin

  • After resting, slice the roast very thin. Use a sharp knife. Slice against the grain. Thin slices help create that classic sandwich texture. Keep slices covered to stay warm.

Make the Signature Sauce

  • In a small saucepan, add ketchup, brown sugar, vinegar, Worcestershire sauce, garlic powder and pepper. Whisk well. Heat over low heat. Stir gently for five minutes. The sauce should thicken slightly.

Warm the Beef with Broth

  • Add sliced beef to a skillet or pan. Pour beef broth over it. Warm gently on low heat. Do not boil. This keeps the beef juicy and soft. Stir gently to coat slices.

Toast the Buns Lightly

  • Split sandwich buns. Toast lightly in the oven or skillet. Do not over-toast. The buns should stay soft. This step adds warmth and structure to the sandwich.

Assemble the Sandwiches

  • Place warm beef slices on the bottom bun. Spoon some sauce over the meat. Add extra sauce if desired. Place the top bun gently. Serve immediately while warm.
