Ingredients
  

  • 1 sheet puff pastry vegetarian
  • 1 small butternut squash peeled and diced
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 small red onion chopped
  • 2 cloves garlic minced
  • 200 g mushrooms chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 100 g spinach leaves
  • 50 g feta or cream cheese optional
  • 1 egg beaten (for glazing)

Instructions
  

Preheat the Oven

  • Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. This prevents sticking and makes cleaning easy.

Roast the Vegetables

  • In a large bowl, toss diced squash, peppers, red onion and mushrooms with olive oil, garlic, thyme, rosemary, salt and pepper. Spread on the tray. Roast for 20–25 minutes until tender.

Sauté Spinach

  • While vegetables roast, heat a small pan with a teaspoon of olive oil. Add spinach leaves and cook until just wilted. Remove from heat and set aside.

Prepare Puff Pastry

  • Roll out the puff pastry slightly if needed. Keep it rectangular for easy wrapping. Ensure edges are not too thin to avoid tearing.

Layer the Filling

  • Place roasted vegetables in the center of the pastry. Spread wilted spinach over vegetables. Add feta or cream cheese if using for extra flavor.

Fold the Pastry

  • Fold one side of the pastry over the filling, then the other. Press edges to seal. Make small cuts on top to let steam escape.

Glaze with Egg

  • Brush the top with beaten egg. This helps the pastry turn golden and shiny while baking.

Bake the Wellington

  • Place on the lined baking tray. Bake for 15–20 minutes or until pastry is golden brown and puffed.

Cool Slightly

  • Remove from oven and let cool for 5 minutes. This helps the Wellington hold its shape when slicing.

Slice and Serve

  • Use a sharp knife to cut into portions. Serve warm with your favorite sauce or gravy for extra flavor.
