Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 100 g unsalted butter softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 g pitted dates chopped
  • 1 cup boiling water
  • For the toffee sauce:
  • 100 g unsalted butter
  • ¾ cup brown sugar
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions
  

Prepare the Dates

  • Place chopped dates in a bowl. Pour boiling water over them. Stir and leave for ten minutes. This softens the dates and makes the pudding moist.

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Grease your baking dish with butter. This ensures the pudding does not stick.

Mix Dry Ingredients

  • In a mixing bowl, combine flour, baking powder, bicarbonate of soda and salt. Whisk gently to remove lumps. Set aside.

Cream Butter and Sugar

  • In another bowl, beat the butter and brown sugar together until light and fluffy. Add eggs one at a time. Mix in vanilla extract.

Combine with Dates

  • Add softened dates with water to the butter mixture. Stir well. Then fold in dry ingredients gently. The batter should be smooth and thick.

Pour into Baking Dish

  • Pour the batter into the prepared baking dish. Smooth the top with a spoon. Tap lightly to remove air bubbles.

Bake the Pudding

  • Place in the oven and bake for 30-35 minutes. A skewer should come out clean when inserted. The pudding should be golden brown on top.

Make the Toffee Sauce

  • While the pudding bakes, melt butter in a saucepan. Stir in brown sugar and cream. Simmer gently for five minutes. Add vanilla extract. The sauce should be smooth and glossy.

Serve Warm

  • Remove pudding from oven. Pour half the toffee sauce over the pudding. Serve the rest on the side. Optionally, add cream or vanilla ice cream. Enjoy warm for the best taste.
