Prepare the Chicken

  • Season the chicken with salt and pepper. Heat olive oil in a frying pan. Brown the chicken on both sides for 5–6 minutes. Remove from the pan and set aside. Browning helps seal in the juices.

Cook the Onion and Garlic

  • In the same pan, add chopped onion and crushed garlic. Sauté for 3–4 minutes until soft and fragrant. This builds a flavorful base for the sauce.

Add the Mushrooms

  • Add sliced mushrooms to the pan. Cook for 5 minutes until slightly golden. Mushrooms add earthy flavor and texture to the dish.

Pour in the Cider

  • Carefully pour the dry cider into the pan. Stir well, scraping any brown bits from the bottom. Let it simmer for 3 minutes to reduce slightly.

Add Cream and Mustard

Return Chicken to Pan

  • Place the browned chicken back into the pan. Spoon some sauce over the top. Sprinkle thyme leaves evenly. Cover and simmer for 20–25 minutes until the chicken is cooked through.
