  • 1 tablespoon tomato puree
  • 1 cup chicken or vegetable stock

Instructions
  

Brown the Sausages

  • Heat olive oil in a large casserole dish over medium heat. Add sausages and brown on all sides. Remove and set aside. This seals in flavor and makes them juicy.

Cook the Vegetables

  • In the same dish, add chopped onion, garlic, carrots, celery and red pepper. Stir occasionally and cook for 5–7 minutes until softened. This builds the base flavor.

Add Spices

  • Sprinkle thyme and smoked paprika over the vegetables. Stir well. Cook for 1 minute to release the aroma. Spices make the casserole aromatic and delicious.

Add Tomatoes and Stock

  • Pour in chopped tomatoes, tomato puree and stock. Stir everything together. Bring to a gentle simmer. This forms the rich, tasty sauce for the casserole.

Return Sausages to the Dish

  • Place the browned sausages back into the casserole. Cover with a lid or foil. Bake in a preheated oven at 180°C (350°F) for 40–45 minutes. The sausages will cook through and absorb the flavors.

Season and Garnish

  • Check seasoning and add salt and pepper if needed. Sprinkle fresh parsley over the casserole. Serve hot with mashed potatoes, rice, or crusty bread. Enjoy every bite!
