Ingredients

  • 500 g pork fillet trimmed and cut into strips
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 250 g mushrooms sliced
  • 2 tablespoons olive oil or butter
  • 1 tablespoon plain flour
  • 1 teaspoon paprika
  • 200 ml chicken or vegetable stock
  • 150 ml double cream
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)
  • Cooked rice or pasta to serve

Instructions

Prepare the Pork

  • Cut the pork fillet into thin, even strips. Season lightly with salt and pepper. This ensures the pork cooks quickly and evenly.

Cook the Pork

  • Heat 1 tablespoon of oil or butter in a large pan. Fry the pork strips for 2–3 minutes until lightly browned. Remove and set aside to prevent overcooking.

Sauté Onions and Garlic

  • In the same pan, add remaining oil or butter. Sauté the onions until soft, about 3 minutes. Add garlic and cook for another minute until fragrant.

Add Mushrooms

  • Add the sliced mushrooms to the pan. Cook for 5 minutes until they release moisture and become tender. This adds rich flavor to the stroganoff sauce.

Make the Sauce Base

  • Sprinkle the flour and paprika over the vegetables. Stir well to coat everything. This helps thicken the sauce and adds a smoky flavor.

Add Stock and Cream

  • Slowly pour in the stock, stirring constantly. Then add the cream and Dijon mustard. Bring to a gentle simmer. The sauce should be smooth and slightly thickened.

Combine Pork with Sauce

  • Return the cooked pork to the pan. Stir gently to coat in the sauce. Simmer for 5 minutes until pork is fully cooked and tender.

Season and Garnish

  • Taste the stroganoff and adjust salt and pepper if needed. Sprinkle freshly chopped parsley on top for color and freshness.

Serve Immediately

  • Serve your Hairy Bikers Pork Stroganoff over cooked rice, egg noodles or pasta. Enjoy it hot for the best creamy experience.

Notes

  • For extra richness, add a splash of white wine before adding stock.
  • Swap pork fillet with chicken breast for a lighter version.
  • Use cremini or chestnut mushrooms for deeper flavor.
  • Serve with mashed potatoes instead of rice for a classic touch.
  • Add a teaspoon of smoked paprika for a subtle smoky twist.
