Ingredients

  • 3 garlic cloves
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 tablespoon vinegar
  • Salt and pepper to taste

Prepare the Chicken

  • Wash and pat dry the chicken pieces. Make small cuts on the surface. This helps the marinade go deeper.

Make the Piri Piri Sauce

  • Add chilies, garlic, olive oil, lemon juice, paprika, oregano and vinegar to a blender. Blend until smooth.

Season the Sauce

  • Add salt and pepper to the sauce. Taste and adjust spice level. This sauce is the heart of the recipe.

Marinate the Chicken

  • Place chicken in a bowl. Pour the sauce over it. Mix well so every piece is coated evenly.

Rest the Chicken

  • Cover and let it marinate for at least 1 hour. For best flavor, leave it overnight.
