Ingredients
  

  • 3 large onions thinly sliced
  • 1 cup gram flour
  • 2 tablespoons rice flour
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • ½ teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 tablespoon chopped fresh coriander
  • 1 small green chili finely chopped
  • Water as needed
  • Oil for frying

Instructions
  

Slice the Onions

  • Peel onions and slice them thin. Keep slices even so they cook nicely and stay soft inside.

Add Salt to Onions

  • Place onions in a bowl. Add salt and mix gently. Let them rest for ten minutes.

Watch the Magic

  • Onions release water while resting. This natural moisture helps bind the bhaji mixture later.

Add Spices

  • Add cumin, coriander, turmeric, chili powder and garam masala. Mix gently with clean hands.

Add Fresh Flavor

  • Add chopped green chili and fresh coriander. These give heat and a bright fresh taste.

Add Flours

  • Sprinkle gram flour and rice flour over onions. Mix slowly until onions are well coated.

Adjust Texture

  • Add a little water if needed. The mixture should feel sticky, not runny or dry.

Heat the Oil

  • Heat oil in a pan over medium heat. Oil should be hot, but not smoking.

Shape the Bhajis

  • Take small portions of mixture. Gently drop them into hot oil using fingers or spoon.

Fry Until Golden

  • Fry bhajis for three to four minutes. Turn them carefully until golden and crisp.

Drain Excess Oil

  • Remove bhajis with slotted spoon. Place on paper towels to absorb extra oil.

Serve Hot
