Ingredients
  

  • 1 cup 150g mixed nuts (walnuts, almonds, cashews)
  • 1 cup 100g breadcrumbs
  • 1 small onion finely chopped
  • 1 carrot grated
  • 1 celery stick finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 large eggs
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable stock

Optional topping:

  • 2 tablespoons tomato glaze or ketchup

Prepare the Oven and Tin

  • Preheat your oven to 180°C or 350°F. Line a loaf tin with baking paper. Lightly grease the sides. This helps the nut roast come out easily after baking. Preparing the tin first saves time later.

Chop the Nuts

  • Place mixed nuts in a food processor. Pulse until finely chopped but not powder. If you do not have one, chop with a knife. Small pieces give better texture in every bite.

Cook the Vegetables

  • Heat olive oil in a frying pan. Add chopped onion, carrot, celery, and garlic. Cook on medium heat for about 5 minutes. Stir gently. The vegetables should become soft but not brown.

Mix the Ingredients

  • In a large bowl, combine chopped nuts and breadcrumbs. Add cooked vegetables. Stir well. Add eggs, soy sauce, herbs, salt, pepper and stock. Mix until everything combines evenly. The mixture should feel moist but firm.

Fill the Loaf Tin

  • Spoon the mixture into the prepared loaf tin. Press it down gently with a spoon. Smooth the top. Spread a thin layer of tomato glaze if using. This adds color and flavor.

Bake the Nut Roast

  • Place the loaf tin in the oven. Bake for 40 to 45 minutes. The top should look golden brown. The center should feel firm when touched lightly.

Rest Before Serving

  • Remove from the oven and let it rest for 10 minutes. This step is important. It helps the nut roast hold its shape. Carefully lift it from the tin and slice gently.
