Ingredients
  

  • 2 large eggplants sliced
  • 2 tablespoons olive oil
  • 400 g minced beef or lamb
  • 1 onion chopped
  • 2 cloves garlic minced
  • 400 g canned tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the White Sauce:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 400 ml milk
  • 50 g grated cheese
  • 1 egg

Instructions
  

Prepare the Eggplant

  • Slice the eggplants into thin rounds. Sprinkle with salt and leave for 15 minutes. This removes bitterness. Rinse and pat dry. Brush with oil and set aside.

Cook the Eggplant

  • Heat a pan and cook eggplant slices lightly. Cook both sides until soft and golden. Do not overcrowd the pan. Set cooked slices aside on a plate.

Cook the Meat

  • In a large pan, heat oil. Add chopped onion and cook until soft. Add garlic and cook briefly. Then add minced meat. Cook until browned and fully cooked.

Make the Meat Sauce

  • Add canned tomatoes and tomato paste to the meat. Stir well. Add cinnamon, salt, and pepper. Let it simmer for 15 minutes. The sauce should thicken nicely.

Prepare the White Sauce

  • In a saucepan, melt butter. Add flour and cook for one minute. Slowly add milk while whisking. Keep stirring until smooth and thick. Add cheese and mix well.

Add Egg to Sauce

  • Remove the sauce from heat. Let it cool slightly. Add one egg and mix quickly. This makes the sauce rich and creamy.

Preheat the Oven

  • Set your oven to 180°C. Let it heat fully. A hot oven helps cook the layers evenly.

Layer the Moussaka

  • Place eggplant slices in the baking dish. Add a layer of meat sauce. Repeat layers until everything is used. Finish with the white sauce on top.

Bake the Dish

  • Place the dish in the oven. Bake for 35–40 minutes. The top should turn golden and slightly crispy.

Rest and Serve

  • Remove from oven and let it rest for 10 minutes. This helps the layers set. Slice and serve warm. Enjoy the rich flavors and soft texture.
