Ingredients

  • 2 cups self-raising flour
  • ½ cup unsalted butter chilled and diced
  • 3 tablespoons sugar
  • ½ cup milk
  • ½ cup strawberry jam or raspberry jam
  • 1 tablespoon milk for brushing
  • 1 tablespoon sugar for sprinkling

Optional for serving:

  • Custard sauce
  • Vanilla ice cream

Instructions

Preheat the Oven

  • Start by preheating your oven to 375°F (190°C). Line a baking tray with parchment paper. This prevents the pudding from sticking and makes cleanup easier later.

Make the Dough

  • Place the flour and sugar in a mixing bowl. Add the chilled butter pieces. Rub the butter into the flour using your fingers until it looks like fine crumbs.

Add the Milk

  • Slowly pour milk into the flour mixture. Mix gently until the dough forms. Do not overmix because you want the dough soft and light.

Roll Out the Dough

  • Lightly flour your work surface. Place the dough on the surface and roll it into a rectangle. The thickness should be about half an inch.

Spread the Jam

  • Spread the jam evenly across the dough. Leave a small border around the edges so the jam does not spill out while baking.

Roll the Dough

  • Carefully roll the dough from one long side to the other. You will create a log shape with a beautiful jam swirl inside.

Place on Baking Tray

  • Place the rolled pudding seam side down on the prepared tray. Brush the top lightly with milk. Sprinkle a little sugar for a golden finish.

Bake the Jam Roly Poly

  • Bake in the oven for about 30–35 minutes. The pudding should turn golden brown and slightly crisp on the outside.

Let It Rest

  • Remove the pudding from the oven and let it rest for 5 minutes. This helps the slices hold their shape when cutting.

Slice and Serve

  • Cut the pudding into slices. Serve warm with custard, cream or ice cream for a perfect dessert.

Notes

  • Use raspberry jam for a slightly tangy flavor.
  • Do not overwork the dough or it may become tough.
  • Add lemon zest to the dough for a fresh taste.
  • Sprinkle coconut or crushed nuts inside with the jam.
  • Serve with warm custard for the classic British experience.
