Ingredients
  

  • 400 grams mixed fish fillets cod, salmon, smoked haddock
  • 500 grams potatoes peeled and chopped
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup low-fat milk
  • 1 tablespoon plain flour
  • 100 grams frozen peas
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon chopped fresh parsley
  • 1 egg beaten (for topping, optional)

Instructions
  

Preheat the Oven

  • Preheat your oven to 200°C (180°C fan)/400°F. Place a rack in the center. This ensures even baking for the pie.

Boil the Potatoes

  • Place potatoes in a large saucepan of salted water. Boil for 15–20 minutes until tender. Drain and mash with a little milk or olive oil. Set aside.

Prepare the Fish

  • Check fish for bones. Cut fillets into bite-sized pieces. Keep them cold until ready to use. Fresh fish cooks quickly and stays tender.

Make the Sauce

  • In a saucepan, heat olive oil over medium heat. Add chopped onion and garlic. Cook until soft and fragrant. Stir in flour and cook for one minute.

Add Milk

  • Gradually pour in low-fat milk while whisking. Stir constantly until sauce thickens. Add salt, pepper and Dijon mustard. Simmer gently for 3–5 minutes.

Add Fish and Peas

  • Remove saucepan from heat. Stir in fish pieces and frozen peas. Add chopped parsley. Mix gently to coat everything in sauce.

Assemble the Pie

  • Pour the fish mixture into a greased ovenproof dish. Spread mashed potatoes evenly on top. Smooth the surface with a spatula. Brush with beaten egg if desired.

Bake the Pie

  • Place the dish in the oven. Bake for 25–30 minutes until topping is golden brown. Sauce should bubble slightly at the edges. Avoid overbaking to keep fish tender.

Serve Warm

  • Remove from oven carefully. Let pie rest for 5 minutes. Serve warm with a side salad or steamed vegetables. Enjoy the creamy, healthy flavors.
