Ingredients
  

  • 400 g chicken breast sliced
  • 1 tablespoon green curry paste
  • 400 ml coconut milk
  • 1 tablespoon vegetable oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Fresh basil leaves
  • Juice of 1 lime

Instructions
  

Heat the Oil

  • Heat vegetable oil in a large pan over medium heat. Once hot, add the curry paste and cook for one minute until fragrant.

Add Garlic and Ginger

  • Add minced garlic and grated ginger to the pan. Stir well and cook briefly to release their aroma.

Cook the Chicken

  • Add sliced chicken to the pan. Stir until it turns white and begins to cook through evenly.

Add Coconut Milk

  • Pour in the coconut milk slowly. Stir gently to combine all the flavors into a creamy base.

Add Vegetables

  • Add onion, bell pepper and zucchini to the curry. Mix well and let them cook until slightly soft.

Season the Curry

  • Add fish sauce and sugar. Stir well to balance the flavors between salty and sweet.

Simmer the Curry

  • Let the curry simmer for 10–15 minutes. The sauce will thicken and the chicken will become tender.
