Ingredients
  

  • 1 cup fresh breadcrumbs
  • 1 cup grated cheddar cheese
  • 1 small onion finely chopped
  • 1 tablespoon butter
  • 1 teaspoon mustard
  • 1 tablespoon chopped parsley
  • 1 egg yolk
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For coating:

  • ½ cup breadcrumbs
  • 1 egg beaten
  • 2 tablespoons vegetable oil for frying

Instructions
  

Cook the Onions

  • Place a frying pan over medium heat. Add butter and chopped onions. Cook gently for about five minutes. The onions should become soft and slightly golden.

Prepare the Mixture

  • In a large bowl, combine breadcrumbs, grated cheddar cheese, mustard, parsley, salt and black pepper. Add the cooked onions once they cool slightly.

Add the Egg Yolk

  • Add the egg yolk into the mixture. Stir everything together until it forms a thick and slightly sticky mixture.

Shape the Sausages

  • Take a small handful of the mixture. Roll it between your hands to create a sausage shape. Continue until all the mixture is used.

Prepare the Coating

  • Place breadcrumbs on one plate and beaten egg on another. This coating will create a crispy outer layer.

Coat the Sausages

  • Dip each sausage first in the beaten egg. Then roll it in the breadcrumbs until fully coated.

Heat the Oil

  • Add vegetable oil to a frying pan and heat it over medium heat. The oil should be hot but not smoking.

Fry the Sausages

  • Place the sausages gently in the pan. Fry them for about 3–4 minutes on each side. Turn them carefully so they cook evenly.

Serve the Sausages

  • Once golden and crispy, remove them from the pan. Place them on a plate with paper towels. Serve warm with your favorite sides.

  • Use mature cheddar for stronger flavor.
  • Add chopped leeks instead of onions.
  • Bake them instead of frying for a lighter option.
  • Add a pinch of smoked paprika for extra flavor.
