Ingredients
  

  • 200 g self-raising flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon mixed spice
  • 100 g dark brown sugar
  • 100 g unsalted butter
  • 100 g golden syrup
  • 100 ml milk
  • 1 large egg
  • 1 teaspoon baking soda

Instructions
  

Prepare the oven

  • Preheat the oven to 170°C. Line your baking tin with parchment paper and set aside safely.

Melt butter and syrup

  • Place butter, golden syrup and brown sugar into a saucepan. Heat gently until melted and smooth.

Cool the mixture

  • Remove the pan from heat. Let the mixture cool slightly so it does not cook the egg.

Add milk and egg

  • Whisk the milk and egg into the warm syrup mixture. Stir gently until fully blended.

Mix dry ingredients

  • In a bowl, combine flour, ginger, cinnamon, mixed spice and baking soda evenly together.

Combine wet and dry

  • Slowly pour the wet mixture into the dry ingredients. Stir gently until smooth and lump-free.

Pour into tin

  • Pour the batter into the prepared tin. Tap lightly to release any trapped air bubbles.

Bake the cake

  • Bake for 45 minutes. The cake should rise well and feel springy when lightly pressed.

Cool and slice

  • Remove from oven. Let cool in the tin for ten minutes before slicing and serving.

Notes

  • Add chopped stem ginger for extra heat and texture
  • Swap golden syrup with black treacle for deeper flavor
  • Serve warm with custard for a classic feel
  • Add orange zest for a bright citrus note
  • Use almond milk for a dairy-free version
