Ingredients

  • Lamb kidneys – 4 cleaned and sliced
  • Butter – 2 tablespoons
  • Onion – 1 small finely chopped
  • Garlic – 2 cloves minced
  • Mustard – 1 teaspoon
  • Worcestershire sauce – 1 tablespoon
  • Paprika – 1 teaspoon
  • Cayenne pepper – ¼ teaspoon
  • Salt – to taste
  • Black pepper – ½ teaspoon
  • Fresh parsley – 1 tablespoon chopped
  • Lemon juice – 1 teaspoon

Instructions

Prepare the Kidneys

  • Wash the kidneys under cold water. Remove any white parts in the center. Slice them into small pieces. This helps them cook evenly and improves the texture.

Heat the Pan

  • Place a frying pan over medium heat. Add butter and let it melt slowly. The butter adds richness and flavor to the dish.

Cook the Onions and Garlic

  • Add chopped onion to the pan. Cook until soft and light golden. Add garlic and cook for a few seconds until fragrant.

Add the Kidneys

  • Place the sliced kidneys into the pan. Cook for 3–4 minutes. Stir gently. Do not overcook or they may become tough.

Add the Spices

  • Add paprika, cayenne pepper, salt and black pepper. Stir well. The spices give the dish its classic “devilled” flavor.

Add Sauces

  • Add mustard and Worcestershire sauce. Mix everything well. The sauce should coat the kidneys evenly and create a rich texture.

Cook Until Done

  • Cook for another 3–5 minutes. The kidneys should be tender and cooked through. The sauce will thicken slightly.

Finish with Fresh Flavors

  • Turn off the heat. Add lemon juice and chopped parsley. Stir gently. This adds freshness and balances the rich flavors.

Serve Immediately

  • Serve the dish hot. It tastes best fresh. Pair with toast or bread for a complete meal.

Notes

  • Do not overcook kidneys to keep them tender
  • Soak kidneys in milk to reduce strong flavor
  • Add cream for a richer sauce
  • Use beef kidneys if lamb is not available
  • Adjust spice level based on taste
  • Serve on toasted bread for a classic touch
