Ingredients
  

For the Filling:

  • 2 cups canned corned beef chopped
  • 2 medium potatoes peeled and diced
  • 1 medium onion finely chopped
  • 1 tablespoon butter
  • ½ cup beef stock
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 teaspoon dried thyme

For the Pastry:

  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold butter cubed
  • 5 –6 tablespoons cold water
  • 1 egg beaten (for brushing)

Prepare the Potatoes

  • Boil diced potatoes in salted water. Cook until just soft. Do not overcook them. Drain and set aside. They should hold their shape.

Cook the Onion

  • Melt butter in a frying pan. Add chopped onion. Cook on medium heat. Stir until soft and golden. This adds sweetness and flavor.

Make the Filling

  • Add corned beef to the pan. Stir gently. Add potatoes, thyme, salt and pepper. Pour beef stock. Cook for five minutes. The mixture should be moist, not watery.

Prepare the Pastry

  • In a bowl, mix flour and salt. Add cold butter. Rub with fingers until crumbly. Add cold water slowly. Mix until dough forms. Do not overwork the dough.

Roll the Base

  • Divide dough into two parts. Roll one part on floured surface. Place it in pie dish. Press gently into edges. Trim extra dough.

Add the Filling

  • Spoon filling into pastry base. Spread evenly. Do not press too hard. Keep it light and fluffy.

Cover the Pie

  • Roll second dough piece. Place over filling. Seal edges with fingers or fork. Cut small slits on top. Brush with beaten egg.

Bake the Pie

  • Preheat oven to 180°C. Bake for 30 to 35 minutes. The top should turn golden brown. Let it rest for ten minutes before slicing.
