Ingredients
  

  • 300 grams egg noodles
  • 2 tablespoons vegetable oil
  • 2 chicken breasts thinly sliced
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 red bell pepper sliced
  • 1 carrot julienned
  • 1 cup shredded cabbage
  • 3 spring onions chopped
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper

Instructions
  

Cook the Noodles

  • Boil water in a saucepan. Add egg noodles. Cook according to package instructions. Drain and rinse with cold water. Set aside.

Prepare the Ingredients

  • Slice chicken thinly. Chop vegetables evenly. Thin cuts cook faster and stay tender.

Heat the Wok

  • Place wok on medium-high heat. Add vegetable oil. Let it heat properly before adding ingredients.

Cook the Chicken

  • Add sliced chicken to hot wok. Stir-fry for 4–5 minutes. Cook until golden and fully done. Remove and set aside.

Stir-Fry Aromatics

  • Add garlic and ginger to wok. Stir quickly for 30 seconds. Do not let them burn.

Add Vegetables

  • Add bell pepper, carrot, cabbage and spring onions. Stir-fry for 3–4 minutes. Keep vegetables slightly crisp.

Return Chicken

  • Place cooked chicken back into wok. Mix gently with vegetables.

Add Sauces

  • Pour soy sauce, oyster sauce, sesame oil and black pepper. Stir well to coat everything evenly.

Add Noodles

  • Add cooked noodles into wok. Toss gently with tongs. Mix until sauce covers noodles evenly.

Serve Hot

  • Turn off heat. Serve immediately in bowls. Garnish with extra spring onions if desired.

  • Use shrimp instead of chicken.
  • Try whole wheat noodles for extra fiber.
  • Add mushrooms for earthy flavor.
