- 2 cups cooked chicken shredded
- 1 tablespoon olive oil
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 1 bell pepper chopped
- 1 teaspoon paprika
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1 cup tomato sauce
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese
- 6 –8 flour tortillas
- Salt to taste
- Black pepper to taste
- Fresh coriander for garnish
Prepare the Chicken Filling
Heat oil in a large pan over medium heat. Add chopped onion and cook until soft. Stir in garlic and cook for one minute. Add bell pepper and cook until slightly tender. Now add shredded chicken, paprika, cumin and chili powder. Mix well and cook for five minutes. Season with salt and pepper. The mixture should smell rich and spicy.
