Ingredients

  • 400 g canned white beans drained
  • 6 pork sausages
  • 200 g smoked bacon chopped
  • 2 chicken thighs skin removed
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 carrot diced
  • 1 celery stick chopped
  • 400 g canned chopped tomatoes
  • 2 cups chicken stock
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

Brown the Sausages

  • Heat olive oil in a frying pan. Add sausages and cook until browned. Turn them gently for even color. Remove and set aside.

Cook the Bacon and Chicken

  • In the same pan, add chopped bacon. Cook until slightly crispy. Add chicken thighs and brown lightly on both sides. Remove and set aside.

Sauté the Vegetables

  • Add onion, garlic, carrot and celery to the pan. Cook for five minutes. Stir often. The vegetables should soften and smell fragrant.

Add Tomatoes and Stock

  • Stir in tomato paste and chopped tomatoes. Pour in chicken stock. Add thyme and bay leaf. Mix everything gently.

Combine All Ingredients

  • Place beans in the casserole dish. Add browned sausages, bacon, and chicken. Pour the tomato mixture over the top. Stir lightly.

Bake Slowly

  • Preheat oven to 180°C (350°F). Cover dish with lid or foil. Bake for 60 minutes. Slow cooking helps flavors blend beautifully.

Add Breadcrumb Topping

  • Remove foil. Sprinkle breadcrumbs over the top. Bake uncovered for 20–30 minutes. The top should become golden and crisp.

Rest Before Serving

  • Remove from oven and let it rest for 10 minutes. This helps thicken the sauce. Serve warm and enjoy.

Notes

  • Use duck legs for a traditional French touch.
  • Add fresh herbs for brighter flavor.
  • Replace chicken with lamb for richness.
  • Use homemade beans for deeper taste.
  • Stir gently to avoid breaking beans.
  • Let it rest overnight for even better flavor.
