Hairy Bikers Carbonara Recipe

Carbonara is one of my favorite comfort foods. The Hairy Bikers Carbonara Recipe makes it creamy, rich and full of flavor.

Ingredients
  

  • 350 g spaghetti or pasta of your choice
  • 150 g pancetta or smoked bacon chopped
  • 3 large eggs
  • 75 g Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional
  • Olive oil 1 tbsp

Instructions
  

Boil the Pasta

  • Fill a large pot with water and add a pinch of salt. Bring it to a boil. Add spaghetti and cook until al dente, about 8–10 minutes. Drain the pasta and save a little pasta water.

Cook the Pancetta

  • Heat a frying pan over medium heat. Add olive oil and chopped pancetta or bacon. Cook until golden and crispy, about 5–7 minutes. Stir occasionally to prevent burning.

Prepare the Egg Mixture

  • In a mixing bowl, whisk together eggs, grated Parmesan, and black pepper. Make sure it’s smooth and creamy. This will be your sauce.

Add Garlic

  • Add minced garlic to the pan with pancetta. Cook for about 1 minute until fragrant. Do not burn the garlic; it will taste bitter.

Combine Pasta and Pancetta

  • Add drained pasta to the frying pan with pancetta and garlic. Toss well so the pasta is coated with the flavorful oil.

Mix in the Egg Mixture

  • Remove the pan from heat. Slowly pour the egg and Parmesan mixture over the pasta. Stir quickly to make a creamy sauce. Add pasta water if it’s too thick.

Adjust Seasoning

  • Taste your Carbonara and add salt and black pepper as needed. Remember, pancetta and Parmesan are already salty.

Garnish and Serve

  • Serve immediately with extra Parmesan on top. Sprinkle fresh parsley if desired. Enjoy this rich, creamy and comforting dish!

Notes

  • Use fresh eggs for the creamiest sauce.
  • Try guanciale instead of pancetta for authentic flavor.
  • Add peas or mushrooms for a twist.
  • Use Pecorino Romano cheese for sharper taste.
  • Avoid reheating; it’s best fresh.
