Ingredients
  

  • Braising steak 1 kg, cut into chunks
  • Plain flour 2 tablespoons
  • Salt 1 teaspoon
  • Black pepper 1 teaspoon
  • Vegetable oil 2 tablespoons
  • Onion 2 large, chopped
  • Garlic cloves 3, crushed
  • Carrots 3 medium, sliced
  • Celery sticks 2, chopped
  • Tomato paste 2 tablespoons
  • Beef stock 500 ml
  • Worcestershire sauce 1 tablespoon
  • Bay leaves 2
  • Fresh thyme 2 sprigs
  • Mushrooms 200 g, halved

Prepare the Steak

  • Place the steak pieces in a bowl. Sprinkle with flour, salt, and pepper. Toss gently until coated evenly.

Heat the Oil

  • Heat oil in a large pot over medium heat. Let it get hot but not smoking.

Brown the Meat

  • Add steak in batches. Brown all sides slowly. Remove and set aside. This builds deep flavor.

Cook the Onion

  • Add chopped onion to the same pot. Stir and cook until soft and lightly golden.

Add Garlic and Vegetables

  • Add garlic, carrots, and celery. Stir well. Cook for three minutes until fragrant.

Stir in Tomato Paste

  • Add tomato paste to the pot. Cook for one minute. This removes raw taste.

Deglaze the Pot

  • Pour in a little beef stock. Scrape the bottom gently. Lift all the tasty bits.

Return the Steak
