Ingredients
  

  • 500 g minced beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 1 can 400 g chopped tomatoes
  • 2 tablespoons tomato paste
  • 8 small flour tortillas
  • 200 g grated cheddar or Mexican blend cheese
  • 2 tablespoons olive oil
  • Optional garnish: fresh coriander sour cream or salsa

Instructions
  

Prepare the Beef

  • Heat olive oil in a large skillet over medium heat. Add onions and cook until soft. Add garlic and cook 1–2 minutes until fragrant.

Cook the Minced Beef

  • Add minced beef to the skillet. Stir and cook until browned and no pink remains. Break the meat into small pieces while cooking.

Add Peppers and Spices

  • Stir in red and green bell peppers, cumin, paprika, chili powder, salt and pepper. Cook for 5 minutes until peppers soften.

Add Tomatoes and Tomato Paste

  • Pour in chopped tomatoes and tomato paste. Stir well. Let simmer for 10 minutes, allowing flavors to blend. Adjust seasoning if needed.

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Lightly grease an ovenproof baking dish. This ensures enchiladas don’t stick.

Fill the Tortillas

  • Spoon a generous amount of beef mixture into each tortilla. Roll tightly and place seam-side down in the baking dish.

Add Sauce and Cheese

  • Pour any remaining tomato sauce from the skillet over the enchiladas. Sprinkle grated cheese evenly on top. This gives the classic cheesy topping.

Cover and Bake

  • Cover the dish with aluminum foil. Bake in the preheated oven for 20 minutes. This allows the filling to heat through and the flavors to meld.

Uncover and Brown

  • Remove foil and bake for another 5–10 minutes until cheese is golden and bubbly. Keep a close eye to prevent burning.

Garnish and Serve

  • Remove from oven and let rest for 5 minutes. Garnish with fresh coriander, sour cream, or salsa. Serve hot and enjoy!
