Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped pickles
  • 2 boiled eggs chopped
  • 2 tablespoons fresh parsley optional

Instructions

Cook the Macaroni

  • Bring a large pot of salted water to a boil. Add macaroni and cook until tender. Stir occasionally to prevent sticking. Once done, drain the pasta and rinse with cold water. This stops cooking and keeps the texture perfect.

Prepare the Dressing

  • Take a medium bowl and add mayonnaise, mustard and vinegar. Add sugar, salt, and pepper. Whisk everything until smooth and creamy. Taste the dressing and adjust seasoning if needed for balance.

Chop the Vegetables

  • Dice celery, bell pepper and onion into small pieces. Chop pickles finely. Keep pieces small so every bite feels balanced. This step adds crunch and fresh flavor to the salad.

Combine Ingredients

  • Place cooled macaroni in a large bowl. Add chopped vegetables and boiled eggs. Pour the dressing over everything. Mix gently using a spatula until everything is well coated.

Chill Before Serving

  • Cover the bowl and place it in the fridge for at least one hour. This helps flavors blend nicely. Before serving, give it a quick mix and sprinkle fresh parsley if you like.

Notes

  • Use pasta cooked just right, not too soft
  • Chill the salad for better flavor
  • Add shredded chicken for a protein boost
  • Try Greek yogurt instead of some mayo for a lighter version
  • Add a dash of hot sauce for extra kick
  • Use different veggies like carrots or corn
