For the Filling
- 2 tablespoons olive oil
- 1½ pounds ground lamb
- 1 medium onion finely diced
- 2 carrots finely diced
- 2 celery stalks finely diced
- 2 cloves garlic minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh rosemary chopped
- 1 teaspoon fresh thyme leaves
- 1 cup beef or lamb broth
- 1 cup frozen peas
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Mashed Potato Topping
- 2 pounds Yukon Gold potatoes peeled
- 4 tablespoons butter
- ½ cup whole milk
- ¼ cup heavy cream
- 1 egg yolk
- ½ cup grated Parmesan cheese optional
- Salt and pepper to taste
Prepare the Vegetables
While the potatoes cook, finely chop the onion, carrots, celery and garlic. Small pieces cook evenly and blend perfectly into the rich meat filling.
Build the Flavor
Add tomato paste, Worcestershire sauce, rosemary, thyme, salt and pepper. Stir everything together well. Cook for another two minutes to deepen the flavors.
