There is nothing better than a warm, homemade shepherd's pie after a long day. It is hearty, comforting and packed with rich flavors. Gordon Ramsay's Shepherd's Pie Recipe is one of my favorite comfort food dinners because it is both simple and satisfying.

Ingredients
  

For the Filling

  • 2 tablespoons olive oil
  • pounds ground lamb
  • 1 medium onion finely diced
  • 2 carrots finely diced
  • 2 celery stalks finely diced
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh thyme leaves
  • 1 cup beef or lamb broth
  • 1 cup frozen peas
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Mashed Potato Topping

  • 2 pounds Yukon Gold potatoes peeled
  • 4 tablespoons butter
  • ½ cup whole milk
  • ¼ cup heavy cream
  • 1 egg yolk
  • ½ cup grated Parmesan cheese optional
  • Salt and pepper to taste

Instructions
  

Cook the Potatoes

  • Peel the potatoes and cut them into large chunks. Place them in salted water and bring to a boil. Cook until they become fork-tender, then drain them well.

Prepare the Vegetables

  • While the potatoes cook, finely chop the onion, carrots, celery and garlic. Small pieces cook evenly and blend perfectly into the rich meat filling.

Brown the Lamb

  • Heat olive oil in a large skillet over medium-high heat. Add the ground lamb and cook until browned. Break it apart with a wooden spoon while cooking evenly.

Add the Vegetables

  • Stir the onion, carrots, celery and garlic into the browned lamb. Cook for about six minutes until the vegetables soften and become fragrant.

Build the Flavor

  • Add tomato paste, Worcestershire sauce, rosemary, thyme, salt and pepper. Stir everything together well. Cook for another two minutes to deepen the flavors.

Simmer the Filling

  • Pour the broth into the skillet and stir gently. Let the mixture simmer for about ten minutes until slightly thickened. Stir in the peas during the last few minutes.

Make the Mashed Potatoes

  • Mash the cooked potatoes with butter, milk and heavy cream until smooth. Stir in the egg yolk and Parmesan cheese. Season with salt and pepper.

Assemble the Pie

  • Spread the lamb mixture evenly into a baking dish. Carefully spoon the mashed potatoes over the top. Smooth the surface with a spoon or create decorative ridges using a fork.

Bake Until Golden

  • Bake in a preheated 400°F (200°C) oven for about 25 minutes. The top should become lightly golden, and the filling should bubble around the edges.

Rest and Serve

  • Remove the shepherd's pie from the oven and let it rest for ten minutes. This makes serving easier and helps the filling stay together beautifully.
