Ingredients
  

  • 2 ribeye or sirloin steaks about 8 ounces each
  • ¼ cup olive oil
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 garlic cloves minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon Dijon mustard
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Juice of ½ lemon

Prepare the Marinade

  • Place olive oil, Worcestershire sauce, soy sauce, garlic, rosemary, thyme, Dijon mustard, lemon juice, smoked paprika, onion powder, salt and black pepper into a bowl. Whisk everything together until smooth and well combined. The fresh herbs create a wonderful aroma.

Marinate the Steak

  • Pat the steaks dry with paper towels. Place them into a zip-top bag or shallow dish. Pour the marinade over the steaks. Coat every side well. Cover and refrigerate for at least two hours. Overnight marinating gives even deeper flavor.

Bring to Room Temperature

  • Remove the steaks from the refrigerator about thirty minutes before cooking. This helps the meat cook more evenly. Let any extra marinade drip away before placing the steaks on the hot grill or skillet.

Cook the Steaks

  • Heat a cast-iron skillet or grill over medium-high heat until very hot. Cook the steaks for four to five minutes per side for medium-rare. Adjust the cooking time based on your preferred doneness and steak thickness.

Rest Before Serving

  • Transfer the cooked steaks to a clean plate. Add a small piece of butter on top if desired. Let the steaks rest for five to ten minutes. Resting keeps the juices inside and makes every bite tender.

Slice and Serve

  • Slice the steak against the grain for the most tender texture. Sprinkle chopped parsley over the top. Serve with roasted vegetables, mashed potatoes or a fresh green salad for a complete and satisfying meal.
