Ingredients
  

  • 2 whole poussin about 450 g each
  • 3 tablespoons unsalted butter softened
  • 2 tablespoons olive oil
  • 3 cloves garlic crushed
  • 4 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • Salt to taste
  • Black pepper to taste
  • 1 lemon cut in half

Instructions
  

Preheat the Oven

  • Preheat oven to 200°C. Hot oven helps create crispy skin and juicy meat inside.

Prepare the Poussin

  • Pat poussin dry using paper towels. Dry skin helps browning and crisp texture.

Season the Birds

  • Rub poussin with olive oil. Season well with salt and black pepper everywhere.

Add Butter and Herbs

  • Mix butter with garlic and herbs. Rub mixture gently under and over skin.

Stuff with Lemon

  • Place lemon halves inside each poussin. This adds moisture and fresh flavor.

Tie the Legs

  • Tie legs with kitchen twine. This helps even cooking and neat shape.

Place in Pan

  • Place poussin breast side up in roasting pan. Add extra herbs around.

Roast the Poussin

  • Roast for about 35 minutes. Baste once with pan juices halfway through cooking.

Check Doneness

  • Insert thermometer into thickest part. It should reach 74°C when done.

Rest Before Serving

  • Remove from oven. Rest for 5 minutes before serving to keep juices inside.

Notes

  • Always use room temperature butter.
  • Do not skip resting time.
