Ingredients

  • Ground beef – 500g
  • Breadcrumbs – 1 cup
  • Milk – ½ cup
  • Eggs – 2
  • Onion – 1 medium finely chopped
  • Garlic – 3 cloves minced
  • Worcestershire sauce – 2 tablespoons
  • Ketchup – 3 tablespoons
  • Fresh parsley – 2 tablespoons chopped
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Olive oil – 1 tablespoon

Instructions

Preheat the Oven

  • Preheat your oven to 180°C. Lightly grease a baking tray or loaf pan. This helps prevent sticking and ensures even cooking.

Prepare the Breadcrumb Mixture

  • In a bowl, mix breadcrumbs with milk. Let it soak for a few minutes. This keeps the meatloaf soft and moist.

Cook Onion and Garlic

  • Heat olive oil in a pan. Add chopped onion and garlic. Cook until soft and slightly golden. Let it cool before mixing.

Mix the Meatloaf Base

  • In a large bowl, add ground beef, soaked breadcrumbs, cooked onion, and garlic. Mix gently using your hands or a spoon.

Add Flavor Ingredients

  • Add eggs, Worcestershire sauce, ketchup, parsley, salt and pepper. Mix everything until combined. Do not overmix to keep it tender.

Shape the Meatloaf

  • Transfer the mixture to your baking tray. Shape it into a loaf using your hands. Make sure it is even in thickness.

Bake the Meatloaf

  • Place the tray in the oven. Bake for about 50–60 minutes. The top should look browned and slightly firm.

Rest Before Slicing

  • Remove from the oven and let it rest for 10 minutes. This helps the juices settle and makes slicing easier.

Slice and Serve

  • Cut into thick slices and serve warm. Enjoy the juicy texture and rich flavor.

Notes

  • Use a mix of beef and chicken for lighter texture
  • Add grated carrot for extra moisture
  • Top with extra ketchup before baking
  • Use fresh herbs for better flavor
  • Avoid overmixing to keep it soft
  • Check doneness using a thermometer
