- 2 cups elbow macaroni pasta
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup celery finely chopped
- ½ cup red bell pepper finely chopped
- ¼ cup red onion finely chopped
- ¼ cup grated carrot
- 2 tablespoons chopped fresh parsley
- 2 tablespoons sliced green onions
- 1 boiled egg chopped (optional)
- ½ cup sweet corn optional
Cook the Macaroni
Bring a large pot of salted water to a boil. Add elbow macaroni and cook until tender according to package instructions. Stir occasionally to prevent sticking. Once cooked, drain the pasta in a colander and rinse lightly with cool water. Allow the macaroni to cool completely before mixing the salad.
Prepare the Fresh Vegetables
