Ingredients

  • 3 large eggs
  • 250 ml soy milk
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce for serving
  • Optional: chopped green onions

Instructions

Prepare the Egg Mixture

  • Crack the eggs into a bowl. Add soy milk, salt and white pepper. Whisk gently until well combined and smooth.

Strain the Mixture

  • Pour the mixture through a fine sieve into another bowl. This removes bubbles and gives a silky texture.

Prepare the Steamer

  • Heat water in a steamer or pot. Make sure it is gently simmering before placing the egg mixture inside.

Pour into Dish

  • Pour the strained mixture into a heatproof dish. Cover it lightly with foil to prevent water drops from falling.

Steam the Tofu

  • Place the dish in the steamer. Steam for 15–20 minutes until the mixture sets softly like custard.

Check the Texture

  • Insert a knife gently into the tofu. If it comes out clean, the tofu is ready. It should be soft and smooth.

Cool Slightly

  • Remove the dish and let it cool for a few minutes. This helps it firm up slightly for easier cutting.

Slice and Serve

  • Cut the egg tofu into pieces. Drizzle with soy sauce and sesame oil. Garnish with green onions if desired.

Optional Pan Fry

  • For extra texture, lightly pan fry the tofu pieces until golden on the outside. This adds a crispy layer.

Notes

  • Use fresh eggs for best flavor
  • Do not oversteam to keep texture soft
  • Add minced garlic for extra taste
  • Use chicken broth instead of soy milk for variation
  • Try adding mushrooms or shrimp
  • Keep heat low while steaming
