Ingredients
  

  • Beef chuck 2 pounds, cut into chunks
  • Olive oil 2 tablespoons
  • Onion 1 large, chopped
  • Garlic 3 cloves, minced
  • Carrots 3 medium, sliced
  • Potatoes 3 medium, cubed
  • Celery 2 stalks, sliced
  • Beef broth 4 cups
  • Tomato paste 2 tablespoons
  • Worcestershire sauce 1 tablespoon
  • Salt 1 teaspoon
  • Black pepper ½ teaspoon
  • Paprika ½ teaspoon
  • Dried thyme 1 teaspoon
  • Bay leaf 1
  • Flour 3 tablespoons
  • Water 3 tablespoons

Instructions
  

Prepare the Beef

  • Pat beef dry with paper towels. This helps it brown well and adds better flavor later.

Heat the Oil

  • Heat olive oil in a large pot over medium heat. Make sure the oil looks hot but not smoking.

Brown the Beef

  • Add beef in small batches. Brown all sides slowly. Remove beef and set aside.

Cook Onion and Garlic

  • Add onion to the pot. Cook until soft. Add garlic and cook one minute gently.

Add Tomato Paste

  • Stir tomato paste into the pot. Cook for two minutes to deepen the flavor.

Return Beef to Pot

  • Add browned beef back into the pot. Stir to coat with onion mixture.

Add Broth and Seasoning

  • Pour in beef broth. Add Worcestershire sauce, salt, pepper, paprika, thyme and bay leaf.

Simmer the Stew

  • Bring stew to a gentle simmer. Cover and cook on low heat for one hour.

Add Vegetables

  • Add carrots, potatoes and celery. Stir gently. Cover and cook thirty more minutes.

Thicken the Stew

  • Mix flour and water in a bowl. Stir into stew. Cook until thick and rich.

Final Simmer

  • Simmer ten more minutes. Remove bay leaf. Taste and adjust seasoning if needed.

Serve Warm

  • Serve hot in bowls. Enjoy the rich gravy and tender beef.
