Ingredients
  

  • 4 chicken thighs skin on
  • 1 onion finely chopped
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 2 cloves garlic crushed
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato purée
  • 400 g canned chopped tomatoes
  • 100 ml dry white wine
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish

Instructions
  

Prepare the Ingredients

  • Chop the onions, peppers and garlic. Keep chicken ready. Measure other ingredients for easy cooking.

Heat the Oil

  • Pour olive oil into a large pan. Heat on medium until oil shimmers lightly.

Brown the Chicken

  • Add chicken thighs, skin-side down. Cook 5–7 minutes until golden brown. Flip and brown the other side.

Remove Chicken

  • Take chicken out of the pan. Place on a plate. We will cook vegetables next.

Cook the Vegetables

  • Add onion, garlic and peppers to pan. Stir and cook 5 minutes until soft.

Add Paprika and Tomato Purée

  • Sprinkle smoked paprika. Stir in tomato purée. Cook 1–2 minutes to release aroma.

Add Tomatoes and Wine

  • Pour chopped tomatoes and white wine. Stir to combine. Simmer for a few minutes.

Return Chicken

  • Place chicken back in pan. Spoon sauce over chicken to coat. Cover with lid.

Simmer Gently

  • Cook on low heat for 25–30 minutes. Chicken should be cooked through and tender.

Season and Garnish

  • Add salt and black pepper to taste. Sprinkle fresh parsley before serving. Enjoy warm.

Notes

  • Use boneless chicken for quicker cooking.
  • Add a splash of sherry for deeper flavor.
  • Replace paprika with smoked sweet pepper for milder taste.
  • Serve with rice, pasta, or crusty bread.
  • Leftovers taste even better the next day.
