Ingredients

  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon mustard powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon cream cheese optional for extra creaminess

Instructions

Melt the butter

  • Put butter in a saucepan over medium heat. Let it melt slowly, not brown.

Add flour

  • Add flour to melted butter. Stir for 1 minute until it turns light gold.

Pour in milk

  • Slowly add milk while whisking. Keep whisking so it stays smooth.

Cook the sauce

  • Let it simmer for 2–3 minutes. The sauce should thicken slightly.

Add seasonings

  • Add mustard, garlic, onion, salt, pepper, and paprika. Stir well.

Melt the cheddar

  • Turn heat to low. Add shredded cheddar in small batches.

Stir until smooth

  • Keep stirring until all cheese melts. The sauce should be creamy.

Add cream cheese

  • If you want extra creaminess, add cream cheese now. Stir until smooth.

Taste and adjust

  • Taste the sauce. Add more salt if needed. You can add a little more cheese too.

Serve warm

  • Pour sauce into a bowl. Serve while warm. It thickens when it cools.

Notes

  • Use sharp cheddar for a stronger flavor.
  • Add Velveeta for extra smooth texture.
  • Mix in hot sauce for a spicy kick.
  • Use half milk and half cream for a richer sauce.
  • Add diced jalapeños for a fun twist.
  • Keep the sauce warm in a double boiler.
