Ingredients

  • 2 cups cooked macaroni pasta
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt and black pepper to taste
  • 1/2 teaspoon paprika
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • 1/2 cup flour for coating
  • Oil for frying

Instructions

Cook the Pasta

  • Boil macaroni in salted water. Cook until soft but not mushy. Drain and set aside. This will be the base of your bites.

Make the Cheese Sauce

  • In a saucepan, melt butter. Add flour and cook for one minute. Slowly add milk while stirring. Cook until thick and smooth.

Add Cheese

  • Add cheddar and mozzarella cheese to the sauce. Stir until melted. The sauce should be creamy and rich.

Season the Mixture

  • Add salt, pepper and paprika. Mix well. Taste and adjust seasoning if needed. The flavor should be balanced.

Combine Pasta and Sauce

  • Add cooked macaroni to the cheese sauce. Mix well until all pasta is coated. This creates classic mac and cheese.

Chill the Mixture

  • Spread the mixture on a tray. Let it cool completely. Then place it in the fridge for at least one hour. This helps shape the bites.

Shape the Bites

  • Take small portions and roll into balls. Keep them even in size. Place them on a tray lined with parchment paper.

Prepare Coating

  • Place flour, beaten eggs and breadcrumbs in separate bowls. This will help coat the bites for frying.

Coat the Bites

  • Roll each ball in flour, then dip in egg and coat with breadcrumbs. Repeat for all bites. This creates a crispy layer.

Heat the Oil

  • Heat oil in a frying pan or deep fryer. The oil should be hot but not smoking. Test with a small crumb.

Fry the Bites

  • Carefully place bites in hot oil. Fry for 3–4 minutes until golden brown. Turn gently for even cooking.

Drain Excess Oil

  • Remove bites with a slotted spoon. Place on paper towels. This helps remove extra oil and keeps them crispy.

Serve Warm

  • Serve immediately with your favorite dipping sauce. Enjoy the crispy outside and cheesy inside.

Notes

  • Use leftover mac and cheese for quick prep
  • Add chili flakes for a spicy kick
  • Use panko breadcrumbs for extra crunch
  • Try different cheeses like gouda or parmesan
  • Freeze bites before frying for better shape
  • Bake instead of fry for a lighter version
  • Add herbs for extra flavor
