Ingredients

  • 2 cups heavy cream
  • 1/2 cup milk
  • 1/4 cup honey
  • 1 teaspoon dried culinary lavender
  • 1 teaspoon vanilla extract
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water

Instructions

Bloom the Gelatin

  • In a small bowl, add cold water and sprinkle gelatin over it. Let it sit for 5 minutes. This helps it soften and dissolve properly later.

Heat the Cream Mixture

  • In a saucepan, add cream, milk, honey and lavender. Heat on low flame. Stir gently and do not let it boil.

Infuse the Flavor

  • Let the mixture warm slowly for about 5 minutes. This allows the lavender to release its gentle flavor.

Strain the Mixture

  • Remove from heat and strain the mixture. This removes lavender bits and gives a smooth texture.

Add Gelatin

  • Add the softened gelatin into the warm mixture. Stir well until it fully dissolves.

Add Vanilla

  • Mix in vanilla extract. This adds depth and balances the floral flavor.

Pour into Molds

  • Pour the mixture into serving cups or molds. Fill them evenly.

Chill the Dessert

  • Place the cups in the fridge. Let them chill for at least 4 hours until set.

Check the Texture

  • Once firm, gently touch the surface. It should feel soft but set.

Serve and Enjoy

  • Serve directly in cups or unmold onto a plate. Add extra honey or berries if desired.

Notes

  • Use culinary-grade lavender only
  • Do not overheat the cream
  • Adjust honey to your taste
  • Add lemon zest for freshness
  • Use coconut milk for dairy-free version
  • Top with fresh berries for color
