Ingredients
  

  • Fresh coriander leaves for garnish
  • 1 kg fresh crab cleaned and cracked
  • 3 tablespoons oil for cooking
  • 2 medium onions finely chopped
  • 2 tablespoons ginger garlic paste
  • 2 medium tomatoes chopped
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • 1 cup water

Clean the Crab

  • Wash the crab well under running water. Remove the shell top and gills. Crack the claws slightly so flavors enter.

Heat the Oil

  • Place a deep pan on medium heat. Add oil and let it warm. Do not overheat the oil.

Cook the Onions

  • Add chopped onions to the hot oil. Stir well and cook until golden. This builds the base flavor.

Add Ginger Garlic Paste

  • Add ginger garlic paste to the onions. Cook for two minutes. Stir until the raw smell disappears.

Add Tomatoes

  • Add chopped tomatoes to the pan. Cook until soft and mushy. The oil should separate slightly.

Add Dry Spices

  • Add turmeric, chili powder, coriander, cumin and salt. Stir well. Cook for one minute gently.

Add the Crab

  • Add the cleaned crab pieces to the masala. Mix gently so the crab coats well.

Add Water and Simmer

  • Pour in water and mix carefully. Cover the pan. Cook on low heat for twenty minutes.

Check and Finish

  • Open the lid and check the gravy thickness. Garnish with fresh coriander leaves.

Notes

  • Always use fresh crab for the best flavor and texture.
  • Do not overcook the crab, or the meat becomes rubbery.
  • Adjust red chili powder to control the spice level.
  • Add coconut milk for a creamy, milder version of the gravy.
  • Include curry leaves for extra aroma and authentic flavor.
  • Squeeze fresh lemon on top before serving to brighten flavors.
  • Serve with steamed rice or flatbread for a complete meal.
