Ingredients

  • 1 pre-made 9-inch pie crust or homemade
  • 3 large eggs
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups half-and-half or milk
  • 1 cup sweetened shredded coconut
  • 2 tablespoons butter cut into small pieces

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Place the oven rack in the center. This ensures even baking for the custard pie.

Prepare the Pie Crust

  • If using a pre-made crust, place it in a 9-inch pie dish. Prick the bottom lightly with a fork. This prevents bubbling during baking.

Whisk the Eggs

  • In a mixing bowl, whisk the eggs until smooth. Add sugar and salt. Mix until light and slightly frothy.

Add Milk and Vanilla

  • Slowly pour in the half-and-half or milk while whisking. Stir in the vanilla extract and nutmeg. Mix until fully combined.

Add Coconut

  • Fold shredded coconut into the custard mixture. Stir gently. Make sure it distributes evenly for every bite.

Pour into Pie Crust

  • Pour the custard mixture into the prepared pie crust. Spread evenly with a spatula. Dot the top with small pieces of butter.

Bake the Pie

  • Place the pie in the oven. Bake for 45-50 minutes. The custard should be set but slightly jiggly in the center. Avoid overbaking to keep creamy texture.

Cool the Pie

  • Remove from oven carefully. Place on a cooling rack. Let it cool to room temperature. Refrigerate for at least 2 hours before serving for best flavor.

Serve and Enjoy

  • Slice the pie into even pieces. Serve chilled or at room temperature. Optionally, top with whipped cream or toasted coconut.

Notes

  • Use fresh coconut instead of shredded for stronger flavor.
  • Sprinkle toasted coconut on top before serving.
  • Add a splash of coconut extract for extra aroma.
  • Try a graham cracker crust for added crunch.
  • Dust with cinnamon or nutmeg for warm spice.
  • Use whole milk for a lighter version of custard.
