Ingredients
  

  • 4 chicken breasts
  • 3 tablespoons olive oil
  • Juice of 2 lemons
  • 3 garlic cloves minced
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons warm water

Prepare the Chicken

  • Pat the chicken breasts dry with paper towels. This helps them cook evenly. Place them on a plate and season lightly with salt and pepper.

Make the Salmoriglio Sauce

  • In a bowl, mix olive oil, lemon juice, garlic, oregano, parsley, lemon zest and warm water. Whisk until smooth and blended well.

Marinate the Chicken

  • Pour half of the sauce over the chicken. Rub it well into the meat. Let the chicken marinate for at least 15 minutes for better flavor.

Heat the Pan

  • Place a grill pan or skillet on medium heat. Let it become hot before adding the chicken. A hot pan gives nice color and texture.

Cook the Chicken
