Ingredients
  

  • 4 cups chopped kale
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/2 cup roasted salted nuts (peanuts or almonds)
  • 1/2 cup shredded carrots
  • 1 cup diced red or green apples
  • 1/4 cup dried cranberries or cherries
  • 1/4 cup Parmesan cheese shaved
  • Optional: grilled chicken sliced

Dressing Ingredients:

  • 1/4 cup balsamic vinaigrette or honey mustard dressing
  • 1 tablespoon olive oil
  • 1 teaspoon honey optional
  • Salt and pepper to taste

Instructions
  

Wash and Prep the Greens

  • Rinse kale and cabbage under cold water. Pat dry with a towel. Chop kale into bite-sized pieces and shred the cabbage.

Dice the Apples

  • Wash and core the apples. Cut them into small cubes. Apples add a sweet crunch that balances the salad.

Prepare Carrots and Nuts

  • Peel and shred carrots if needed. If nuts are not roasted, lightly toast them in a dry pan for extra flavor.

Mix the Salad Base

  • In a large mixing bowl, combine kale, green cabbage, red cabbage, shredded carrots and diced apples. Toss gently to mix.

Add Dried Fruits and Cheese

  • Add cranberries or cherries and shaved Parmesan. These ingredients add color and texture to the salad.

Make the Dressing

  • In a small bowl, whisk together balsamic vinaigrette, olive oil and honey. Add salt and pepper to taste.

Combine Salad and Dressing

  • Pour the dressing over the salad. Toss gently until all ingredients are coated evenly. Taste and adjust seasoning if needed.

Add Optional Chicken

  • If using grilled chicken, slice thinly and place on top of the salad. It makes it a full meal.

Serve Fresh
