Ingredients
  

  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup finely chopped red bell pepper
  • ½ cup finely chopped celery
  • ¼ cup finely chopped red onion
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Dijon mustard optional
  • Fresh parsley for garnish

Instructions
  

Cook the Macaroni

  • Bring a large pot of salted water to boil. Add macaroni and cook until tender but firm. Drain and rinse with cold water. Set aside.

Prepare the Vegetables

  • While the macaroni cooks, chop the bell pepper, celery, and red onion finely. This adds crunch and color to the salad.

Make the Dressing

  • In a mixing bowl, combine sour cream, mayonnaise, apple cider vinegar, sugar, salt, pepper and Dijon mustard. Whisk until smooth and creamy.

Mix Macaroni and Vegetables

  • Add the cooled macaroni to a large bowl. Toss in chopped vegetables, making sure they are evenly distributed.

Add Cheese and Dressing

  • Sprinkle the shredded cheddar over the macaroni. Pour the dressing on top and mix gently until everything is coated.

Chill Before Serving

  • Cover the bowl with plastic wrap and refrigerate for at least 1–2 hours. Chilling allows flavors to blend beautifully.
