Ingredients

  • 1 unbaked 9-inch pie crust
  • 2-3 large ripe tomatoes
  • 1 teaspoon salt
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup mayonnaise
  • ¼ teaspoon black pepper
  • 1 teaspoon dried basil optional
  • ¼ teaspoon garlic powder

Instructions

Prepare the Tomatoes

  • Wash the tomatoes and slice them thinly. Lay the slices on paper towels to drain excess moisture. Sprinkle lightly with salt to help remove water.

Preheat the Oven

  • Set the oven to 350°F (175°C). This ensures the pie cooks evenly and the crust turns golden.

Prepare the Pie Crust

  • Place the unbaked pie crust in a 9-inch pie dish. Prick the bottom lightly with a fork. This prevents bubbling while baking.

Mix the Cheese Filling

  • In a mixing bowl, combine cheddar cheese, Parmesan, mayonnaise, black pepper, garlic powder and dried basil. Stir until smooth and evenly blended.

Layer the Tomatoes

  • Arrange a layer of tomato slices evenly over the pie crust. This forms the base of your tomato pie.

Add the Cheese Mixture

  • Spread half of the cheese mixture over the tomato layer. Smooth it with a spatula for even coverage.

Repeat Layers

  • Add another layer of tomatoes and then the remaining cheese mixture. Press lightly to hold everything together.

Bake the Pie

  • Place the pie in the preheated oven. Bake for 35-40 minutes until the top is golden brown and bubbling.

Cool Slightly

  • Remove the pie from the oven and let it cool for 10-15 minutes. This helps the layers set and makes slicing easier.

Serve and Enjoy

  • Cut the pie into wedges and serve warm or at room temperature. It pairs wonderfully with fresh salads or roasted vegetables.

Notes

  • Use fresh, ripe tomatoes for the best flavor.
  • Drain tomato slices well to avoid a soggy pie.
  • Add cooked bacon or caramelized onions for extra richness.
  • Try mixing different cheeses, like mozzarella or Monterey Jack.
  • Sprinkle fresh herbs like parsley or thyme before serving for a fresh taste.
