Ingredients

  • 2 tablespoons smoked paprika
  • 1 tablespoon sweet paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • 1 teaspoon dried oregano

Instructions

Measure All the Spices

  • Take out all your spices first. Measure each one carefully using proper spoons. This keeps the flavor balanced. Too much salt or chili can change everything. Place each measured spice into a clean mixing bowl.

Mix Everything Together

  • Use a whisk or spoon to mix the spices well. Stir slowly and break any brown sugar lumps. Keep mixing until the color looks even. The rub should be deep red and smell smoky and sweet.

Prepare the Ribs

  • Remove the thin membrane from the back of the ribs. Pat the ribs dry using paper towels. Dry meat helps the rub stick better. This step is very important for perfect flavor.

Apply the Rub Generously

  • Sprinkle the rub evenly over both sides of the ribs. Use your hands to press it into the meat. Do not rub too hard. Just gently press so the spices stick well.

Let the Ribs Rest

  • Wrap the ribs in plastic wrap or foil. Place them in the fridge for at least 2 hours. Overnight is even better. This allows the flavors to soak deep into the meat.

Cook the Ribs

  • Cook the ribs in the oven at 300°F for about 2.5 to 3 hours. You can also grill them slowly over indirect heat. Low and slow cooking makes the ribs tender and juicy.

Notes

  • Add more cayenne if you like extra heat.
  • Use dark brown sugar for deeper sweetness.
  • Add ½ teaspoon mustard powder for tangy flavor.
  • Try this rub on chicken or beef brisket.
  • Store the rub in an airtight jar for up to 3 months.
