Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup melted butter cooled
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • cups fresh or frozen blueberries
  • 1 tablespoon flour for coating blueberries
  • 2 tablespoons brown sugar for topping

Instructions

Preheat the Oven

  • Preheat your oven to 350°F. Line your loaf pan with parchment paper. This helps easy removal later. Lightly grease the sides if needed. Set the pan aside while you prepare the batter.

Mix the Dry Ingredients

  • In a large bowl, add flour, baking powder, baking soda, salt and sugar. Whisk gently until combined. Make sure there are no lumps. This step helps the bread bake evenly.

Combine the Wet Ingredients

  • In another bowl, crack the eggs. Whisk until smooth. Add melted butter, milk, and vanilla. Mix gently until everything looks blended and creamy.

Bring Batter Together

  • Pour the wet mixture into the dry ingredients. Use a spatula to fold gently. Do not overmix. Stop when you no longer see dry flour. The batter should look thick but smooth.

Prepare the Blueberries

  • Place blueberries in a small bowl. Sprinkle one tablespoon flour over them. Toss gently to coat. This helps prevent sinking during baking. Add blueberries to the batter carefully.

Fill the Pan

  • Pour the batter into the prepared loaf pan. Smooth the top gently. Sprinkle brown sugar evenly on top. This adds a light crunch and pie-like finish.

Bake the Bread

  • Place the pan in the oven. Bake for 50 to 55 minutes. Check doneness with a toothpick. It should come out mostly clean. A few moist crumbs are fine.

Cool Before Slicing

  • Remove the bread from the oven. Let it cool in the pan for 15 minutes. Lift it out carefully. Cool fully on a rack before slicing.

Notes

  • Use lemon zest for a bright flavor twist.
  • Add cinnamon for a warm pie spice note.
  • Swap blueberries for raspberries or mixed berries.
  • Use Greek yogurt instead of milk for richer texture.
  • Add a simple glaze with powdered sugar and milk.
