Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup fresh or frozen blueberries

For the cream cheese filling:

  • 4 oz 115g cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions

Prepare the Cream Cheese Filling

  • In a small bowl, beat cream cheese, sugar and vanilla until smooth. Set aside. This mixture will create a delicious swirl in the loaf.

Preheat Oven and Prepare Pan

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper. This prevents sticking and makes removing the loaf easier.

Mix Dry Ingredients

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. This ensures the baking agents are evenly distributed.

Cream Butter and Sugar

  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract. The mixture should be smooth and creamy.

Add Wet Ingredients

  • Mix sour cream and milk into the butter mixture. Stir gently until combined. Do not overmix, or the loaf may become dense.

Combine Wet and Dry Ingredients

  • Add the dry ingredients gradually to the wet mixture. Fold gently with a spatula until just combined. Be careful not to overmix. The batter should be thick and smooth.

Add Blueberries

  • Gently fold in blueberries. If using frozen, do not thaw to prevent the batter from turning blue. The blueberries add sweetness and moistness to the loaf.

Layer Batter and Cream Cheese

  • Pour half of the batter into the prepared pan. Add cream cheese mixture in a line down the center. Top with the remaining batter and spread evenly. This creates the signature cream cheese swirl.

Bake the Loaf

  • Bake in preheated oven for 50 minutes. Insert a toothpick in the center to check doneness. It should come out clean or with a few moist crumbs. Avoid overbaking to keep it soft.

Cool and Serve

  • Let the loaf cool in the pan for 10 minutes. Transfer to a wire rack to cool completely. Slice and serve. Enjoy warm or at room temperature with coffee or tea.

Notes

  • Use fresh blueberries for best flavor. Frozen berries also work well.
  • Toss blueberries in flour before folding to prevent sinking.
  • Swap sour cream with Greek yogurt for tangy taste.
  • Add lemon zest for a bright, fresh flavor.
  • Sprinkle coarse sugar on top before baking for a crunchy crust.
  • Make mini loaves using smaller pans for gifts or parties.
