Ingredients

  • 1 can 395g sweetened condensed milk
  • 1 cup grated fresh coconut or desiccated
  • 2 tablespoons butter
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • Extra grated coconut for rolling

Instructions

Melt Butter

  • In a medium saucepan, melt the butter over low heat. This prevents burning later.

Add Condensed Milk

  • Pour condensed milk into the pan. Stir gently to mix with butter.

Mix Coconut

  • Add grated coconut and a pinch of salt. Stir until smooth and combined.

Cook the Mixture

  • Cook on low heat, stirring constantly. Cook until mixture thickens and leaves pan sides.

Add Vanilla

  • Remove from heat and stir in vanilla extract. This adds a warm, sweet flavor.

Cool the Mixture

  • Transfer mixture to a bowl. Let it cool for 10-15 minutes, easy to handle.

Shape the Balls

  • With buttered hands, roll mixture into small balls. About 1 inch works best.

Roll in Coconut

  • Roll each ball in extra grated coconut. Ensure all sides are coated.

Place on Sheet

  • Place balls on parchment paper. Leave a little space between each.

Chill Before Serving

  • Refrigerate for at least 30 minutes. Serve cold for best taste and texture.

Notes

  • Use fresh coconut for a richer flavor.
  • Add cocoa powder for chocolate Bala Baiana.
  • Add a few drops of rum for a festive twist.
  • For smaller treats, make mini balls.
  • Avoid high heat to prevent burning the milk mixture.
