Ingredients
  

  • All-purpose flour – 3 cups
  • Salt – 1 teaspoon
  • Cold butter – ½ cup cubed
  • Cold water – ¾ cup
  • Olive oil – 1 tablespoon
  • Ground chicken – 1 pound
  • Onion – 1 small chopped
  • Bell pepper – ½ cup chopped
  • Garlic – 2 cloves minced
  • Cumin – 1 teaspoon
  • Paprika – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Salt – to taste
  • Shredded cheese – 1 cup
  • Egg – 1 beaten

Instructions
  

Make the Dough

  • Mix flour and salt. Cut in butter. Add cold water slowly until dough forms.

Chill the Dough

  • Wrap dough in plastic. Chill for thirty minutes for easier rolling.

Cook the Filling

  • Heat oil in skillet. Add chicken. Cook until lightly browned.

Add Vegetables

  • Add onion, bell pepper and garlic. Cook until soft and fragrant.

Season the Filling

  • Add cumin, paprika, salt and pepper. Stir well. Remove from heat.

Add Cheese

  • Stir shredded cheese into warm filling until melted slightly.

Roll the Dough

  • Roll chilled dough thin. Cut into circles using a bowl or cutter.

Fill the Dough

  • Place filling on each circle. Do not overfill.

Fold and Seal

  • Fold dough over filling. Press edges with fork to seal tightly.

Brush with Egg

  • Brush empanadas with beaten egg for golden color.

Bake the Empanadas

  • Bake at 400 degrees Fahrenheit for twenty-five minutes until golden.

Cool Slightly

  • Remove from oven. Let cool five minutes before serving.

Notes

  • Use beef or shrimp instead of chicken
  • Add jalapeño for heat
  • Fry instead of bake for crisp crust
  • Use store-bought dough to save time
  • Add pineapple for sweetness
