If it has been anywhere a near as cold lately where you live as it it has been here, you might have been craving some serious comfort food. This whole chicken can be made in a slow cooker and is way better than average rotisserie chicken you might find at your local grocery store. Plus, your house will smell AMAZING while the slow cooker is doing its magic. You can serve this chicken on its own with your favorite side dishes or chop it up to use in a delicious bowl of chicken noodle soup. (or any recipe that calls for shredded chicken) Just season your chicken, throw it in your slow cooker, and wait a few hours for the juiciest, most flavorful chicken you’ll ever eat.
Pro tip: You can purchase a silicon roast rack to insert inside your slow cooker to elevate meats and prevent them from sticking. Also, this is the slow cooker I use and would recommend if you are in the market for a new one.
Whole Roasted Chicken in a Slow Cooker
This whole chicken requires less than 15 minutes of prep and lets your slow cooker do all the work for you. Simply season the chicken, place in the slow cooker, wait a few hours, and enjoy! It really is that simple.
- 1 Whole Chicken 3 to 5 pounds
- 2 tbsp Butter softened
- 2 tbsp Olive Oil
- 1 Lemon
- 3 cloves Minced Garlic
- 1 tbsp Rosemary If you have fresh that works great too!
- Salt and Pepper to taste
Clean the chicken and remove the giblets. Make sure to pat the chicken dry.
Squeeze the juice of half of a lemon into the softened butter. Add two cloves of minced garlic as well as salt and pepper and mix well.
Gently separate the skin from the breast with your hand and stuff the butter mixture underneath the skin.
Stuff the cavity of the chicken with the two halves of your lemon.
Rub the entire chicken down with the olive oil and sprinkle with the rosemary as well as a generous amount of salt and pepper and top with the remaining clove of minced garlic. Don't forget to season the inside of the cavity with a little salt and pepper as well.
Place the chicken in your slow cooker. I like to use a silicone roast rack inside my slow cooker to elevate the chicken and prevent the bottom from sticking.
Roast the chicken for 3 to 4 hours on high depending on the weight. Always use a meat thermometer to ensure the chicken has reached the proper internal temperature.
OPTIONAL: If you are wanting crispy skin, you can remove the chicken at the end and place it in a pan to broil for 5 to 10 minutes.
