Scotcharoos are a classic American dessert that originated in the Midwest. These chocolatey, peanut butter treats are the perfect treat to serve both adult and children alike. They are simple and very inexpensive to make and are great for serving a crowd. However I do have to warn you, if your friends and family are anything like mine, you better make more than one pan. Personally, I like to dress mine up by adding a sprinkle of sea salt on top, but that is totally optional. You can also swap out the milk chocolate for dark chocolate chips which I love to do when feeding adults because it balances out the super sweet butterscotch flavor perfectly.
These yummy dessert bars are made of peanut butter coated rice cereal topped with butterscotch and chocolate. They are perfect for any party or family gathering.
- 6 cups Rice Cereal
- 1 cup Creamy Peanut Butter
- 1 cup Light Corn Syrup
- 1 cup Sugar
- 1 cup Butterscotch Chips
- 1 cup Semi-sweet or Dark Chocolate Chips
- Coarse Sea Salt optional
Melt the peanut butter, corn syrup, and sugar together on low heat until melted.
Remove from heat and add in rice cereal. Stir well until completely combined.
Press mixture into a 9x13 cake pan lined with parchment paper.
Combine chocolate and butterscotch chips in a bowl and microwave on 30 second intervals until melted, stirring well every 30 seconds.
Spread the melted chocolate mixture over the cereal and, if desired, sprinkle lightly with sea salt.
Refrigerate for at least an hour before serving so that the chocolate has time to fully set.
